Crispy Air Fryer Swede Chips

Swede chips have a unique, lightly sweet flavour that sets them apart from traditional potato chips. The air fryer is perfect for this dish, as it crisps the chips without making them greasy, thanks to its fast-moving convection heat.

Ingredients

  • 1 large swede, about 800g before peeling, yielding roughly 600g prepared chips
  • 1 tbsp rapeseed oil or light olive oil
  • 1 tsp cornflour
  • ¾ tsp fine sea salt, plus extra to finish
  • ½ tsp smoked paprika
  • ½ tsp garlic granules
  • ¼ tsp ground black pepper
  • ¼ tsp dried thyme or rosemary, crushed between your fingers
  • Optional: 1 tsp nutritional yeast or finely grated Parmesan
  • Optional dip: 3 tbsp Greek yoghurt mixed with 1 tsp Dijon mustard or plant-based yoghurt

Method

  1. Peel the swede thoroughly and cut it into chips about 1cm thick and 7–9cm long.
  2. Soak the chips in a bowl of cold water for 10 minutes, then drain and dry very well.
  3. Preheat the air fryer to 190°C for 3 minutes if recommended by your model.
  4. Return the dry chips to the bowl, add the oil and toss until lightly coated.
  5. Sprinkle over the cornflour, salt, smoked paprika, garlic granules, pepper, and thyme, then toss again until no dusty patches remain.
  6. Tip the chips into the air fryer basket in a loose single layer.
  7. Air fry at 190°C for 12 minutes, shaking the basket hard after 6 minutes.
  8. Increase the temperature to 200°C and cook for a further 6–10 minutes, shaking once more, until the chips are browned at the edges, tender inside, and crisp in spots.
  9. Tip the chips onto a plate or wire rack for 2 minutes before serving, then season with a final pinch of salt and nutritional yeast or Parmesan if using.
