Spicy Honey Glazed Pork Chops

Spicy honey glazed pork chops are a delight when cooked in an air fryer, as it crisps the edges and creates a glossy glaze without excess oil. The air fryer’s rapid convection ensures the pork remains juicy while the glaze turns into a beautiful lacquer.

Ingredients

  • 4 pork loin chops, about 180–220g each and 2–2.5cm thick, bone-in or boneless
  • 1 tbsp neutral oil, such as rapeseed or sunflower oil
  • 1 tsp fine sea salt
  • ½ tsp freshly ground black pepper
  • 1 tsp smoked paprika
  • ½ tsp garlic granules
  • ½ tsp ground cumin
  • 3 tbsp runny honey
  • 1½ tbsp soy sauce, preferably light soy sauce
  • 1 tbsp sriracha, gochujang or chilli garlic sauce
  • 1 tbsp cider vinegar or rice vinegar
  • 1 tsp Dijon mustard
  • 1 large garlic clove, finely grated
  • ½ tsp dried chilli flakes, optional
  • 1 tsp cornflour mixed with 1 tbsp cold water, optional

Method

  1. Take the pork chops out of the fridge 20 minutes before cooking and pat them dry with kitchen paper.
  2. Mix salt, pepper, smoked paprika, garlic granules, and cumin in a small bowl.
  3. Rub the chops with oil and season all over, including the fatty edge.
  4. In a separate bowl, stir together honey, soy sauce, sriracha, vinegar, Dijon mustard, grated garlic, and chilli flakes. Add cornflour slurry if a thicker glaze is desired.
  5. Preheat the air fryer to 190°C for 3 minutes.
  6. Arrange the chops in a single layer in the air fryer basket.
  7. Cook at 190°C for 6 minutes, turn the chops, then cook for another 4 minutes.
  8. Brush the top and sides of each chop with a thin layer of glaze.
  9. Cook at 180°C for 2 minutes, turn, glaze the second side, and cook for another 2–4 minutes.
  10. Check the thickest part with a thermometer, aiming for 63°C followed by a 5-minute rest.
  11. Rest the pork chops on a warm plate for 5 minutes and spoon over any clean, unused glaze.
  12. Finish with spring onions, sesame seeds, or a squeeze of lime.
