Maple Glazed Brussels Sprouts with Bacon
Brussels sprouts shine when their cut faces are deeply browned while the centres remain sweet and firm. The air fryer is perfect for this dish as it quickly dries the surface, encouraging caramelisation and allowing bacon fat to coat the sprouts without them stewing in liquid.
Ingredients
- 500g Brussels sprouts, trimmed and halved
- 150g smoked streaky bacon, cut into 1cm pieces
- 1 tbsp olive oil or rapeseed oil
- 2 tbsp pure maple syrup
- 1 tsp Dijon mustard
- 1 tsp apple cider vinegar
- ½ tsp fine sea salt
- ½ tsp freshly ground black pepper
- ¼ tsp garlic granules, optional
- Pinch of chilli flakes, optional
- 1 tbsp chopped parsley, optional
Method
- Trim the Brussels sprouts and dry them thoroughly.
- Toss the sprouts in a bowl with olive oil, salt, pepper, and garlic granules until glossy.
- Preheat the air fryer to 190°C for 3 minutes.
- Add bacon pieces to the basket and cook at 190°C for 3 minutes, shaking once.
- Add the sprouts to the basket, spreading them out, and cook at 190°C for 8 minutes.
- Shake or turn the sprouts, then continue cooking for 4 to 6 minutes until browned and crisp.
- Stir maple syrup, Dijon mustard, and vinegar in the seasoning bowl.
- Toss hot sprouts and bacon in the maple mixture, then return to the basket for 1 to 2 minutes at 180°C.
- Transfer to a serving dish, sprinkle with parsley if using, and adjust salt to taste.
