Air Fryer Recipe
Maple-Glazed Bacon Brussels Sprouts
These maple-glazed bacon Brussels sprouts are a treat with their dark, frilly edges and sticky sweetness. An air fryer is ideal for this dish, as it quickly dries the sprouts while the bacon fat bastes them, achieving a roast-like finish effortlessly.
Ingredients
- 500g Brussels sprouts, trimmed and halved
- 150g smoked streaky bacon, cut into 1cm strips
- 1 tbsp rapeseed oil or light olive oil
- 2 tbsp maple syrup
- 1 tsp Dijon mustard
- 1 tsp cider vinegar or white wine vinegar
- ½ tsp garlic granules
- ¼ tsp fine sea salt
- ½ tsp freshly ground black pepper
- Pinch of chilli flakes, optional
- 25g pecans or walnuts, roughly chopped, optional
- Finely grated zest of ½ lemon, optional
Method
- Trim the Brussels sprouts and halve them through the root.
- Pat the sprouts dry with kitchen paper.
- In a mixing bowl, toss the sprouts with oil, garlic granules, black pepper, and ¼ tsp salt.
- Add the chopped bacon to the bowl and toss again.
- Preheat the air fryer to 190°C for 3 minutes.
- Tip the sprout and bacon mixture into the air fryer basket, spreading it into a wide layer.
- Air fry at 190°C for 8 minutes, then shake the basket and turn any pale sprouts towards the edges.
- Cook for another 4–6 minutes until the sprouts are nearly tender and the bacon is mostly crisp.
- Meanwhile, mix maple syrup, Dijon mustard, and cider vinegar in a small bowl.
- Drizzle the glaze over the hot sprouts and bacon, then toss quickly.
- Scatter over the nuts if using.
- Return to the air fryer for 2–4 minutes at 180°C, shaking once.
- Tip everything into a serving dish and leave for 2 minutes before tasting.
- Finish with lemon zest if using, and add a tiny pinch of salt if needed.
