Honey-Sesame Roasted Nuts
These honey-sesame roasted nuts are a delightful snack with a crisp, shiny coating that doesn't cling to your fingers. The air fryer is perfect for this recipe as it quickly removes surface moisture from the honey glaze, ensuring a crisp finish without scorching the sugars.
Ingredients
- 300g raw mixed nuts (almonds, cashews, pecans, hazelnuts or walnuts)
- 45g runny honey
- 15ml neutral oil (rapeseed or sunflower oil)
- 18g sesame seeds (white or mixed white and black)
- 12g light brown soft sugar (optional)
- ¾ tsp fine sea salt
- ½ tsp ground cinnamon (optional)
- ¼ tsp smoked paprika or cayenne pepper (optional)
- ½ tsp vanilla extract (optional)
- Flaky sea salt, to finish
Method
- Line the air-fryer basket with a silicone liner or perforated parchment.
- Preheat the air fryer to 150°C for 3 minutes if needed.
- Air fry the raw nuts at 150°C for 4 minutes, shaking once halfway through.
- Mix honey, oil, sugar, salt, cinnamon, paprika, and vanilla in a heatproof bowl. Warm briefly if needed.
- Add hot nuts to the bowl and stir for 45–60 seconds until glossy.
- Sprinkle sesame seeds over nuts and stir again.
- Return coated nuts to the basket in a single layer.
- Air fry at 140°C for 5 minutes, then shake or stir.
- Cook for another 3–5 minutes at 140°C, checking every 90 seconds.
- Scrape nuts onto baking parchment, separate clumps, and sprinkle with flaky sea salt.
- Cool for at least 20 minutes before tasting.
