Honey-Sesame Roasted Nuts

These honey-sesame roasted nuts are a delightful snack with a crisp, shiny coating that doesn't cling to your fingers. The air fryer is perfect for this recipe as it quickly removes surface moisture from the honey glaze, ensuring a crisp finish without scorching the sugars.

Ingredients

  • 300g raw mixed nuts (almonds, cashews, pecans, hazelnuts or walnuts)
  • 45g runny honey
  • 15ml neutral oil (rapeseed or sunflower oil)
  • 18g sesame seeds (white or mixed white and black)

  • ¾ tsp fine sea salt
  • ½ tsp ground cinnamon (optional)
  • ¼ tsp smoked paprika or cayenne pepper (optional)
