Air Fryer Recipe
Honey-Glazed Parsnip and Apple Fritters
These fritters come out beautifully craggy and golden, with a delightful balance of earthy parsnip and sharp-sweet apple. The air fryer is ideal for this recipe as it quickly dries the grated vegetables, setting the batter before the honey glaze is applied, resulting in less oil absorption and better browning.
Ingredients
- 350g parsnips, peeled and coarsely grated
- 1 medium eating apple, about 150g, coarsely grated
- 1 small onion or 2 spring onions, finely sliced
- 2 medium eggs, beaten
- 45g plain flour
- 25g cornflour
- 35g panko breadcrumbs
- 1 tsp baking powder
- 1 tsp fine sea salt, plus a pinch for drawing out moisture
- ½ tsp ground cumin
- ½ tsp smoked paprika
- ¼ tsp ground black pepper
- 1 tbsp chopped fresh thyme leaves
- 1 tbsp rapeseed oil or light olive oil, plus extra for brushing or spraying
- 3 tbsp runny honey
- 1 tbsp apple cider vinegar
- 1 tsp wholegrain mustard
- Finely grated zest of ½ lemon, optional
Method
- Coarsely grate the parsnips and apple, then put them in a bowl with a small pinch of salt and leave for 8 minutes.
- Tip the grated mixture into a clean tea towel and squeeze firmly over the sink until only a little moisture drips out.
- In a large bowl, mix the eggs, onion, flour, cornflour, breadcrumbs, baking powder, 1 tsp salt, cumin, paprika, pepper, thyme and 1 tbsp oil until you have a thick, tacky batter.
- Fold in the squeezed parsnip and apple, separating any clumps with your fingers.
- Preheat the air fryer to 190°C for 3 minutes. Line the basket with perforated parchment or lightly brush the basket with oil.
- Shape the mixture into 10–12 fritters, about 7cm wide and 1.5cm thick. Arrange the fritters in a single layer with at least 1cm between them.
- Brush or spray the tops lightly with oil, then air fry at 190°C for 8 minutes.
- Turn the fritters carefully with tongs or a thin spatula and cook for another 5–6 minutes.
- While they cook, stir the honey, apple cider vinegar, mustard and lemon zest together in a small bowl.
- Brush the tops of the fritters with the honey glaze and cook for 1–2 minutes at 180°C. Turn, glaze the second side, and cook for 1 minute more.
- Rest the fritters on a rack or plate for 3 minutes before serving.
