Crispy Vegetable Tempura

Ingredients
- 1 cup of plain flour
- 1 cup of ice-cold sparkling water
- A pinch of baking soda

Method
- Thoroughly wash and cut your choice of vegetables into uniform sizes. Pat them dry with a kitchen towel to remove excess moisture.
- In a bowl, gently combine the flour, baking soda, and a pinch of salt. Gradually add the ice-cold sparkling water, mixing the ingredients lightly.
- Preheat your air fryer to 180°C (356°F).
- Dip each vegetable piece lightly in the batter until evenly coated. Place them in a single layer in the air fryer basket, ensuring they do not overlap. Spray a light coat of vegetable oil over the pieces.
- Air fry the tempura for about 8-10 minutes, or until golden and crispy, shaking the basket halfway through cooking.
- Once cooked, transfer the tempura to a paper towel-lined plate to absorb any excess oil. Serve immediately with a side of dipping sauce.
