Crispy Sunflower Seed Bites
These sunflower seed bites are a delightful combination of crisp edges and a nutty, spiced centre. The air fryer is ideal for this recipe as it quickly dries the surface, promoting a perfect golden finish while keeping the inside just right. A small amount of oil suffices, thanks to the natural fats in the seeds.
Ingredients
- 160g sunflower seeds, plain and hulled
- 40g porridge oats
- 35g plain flour or chickpea flour
- 1 tbsp cornflour
- 1 medium egg, beaten
- 2 tbsp natural yoghurt, Greek yoghurt or dairy-free plain yoghurt
- 1 tbsp olive oil, plus a little extra for brushing or spraying
- 1 tbsp sesame seeds, optional
- 1 tsp smoked paprika
- 1/2 tsp ground cumin
- 1/4 tsp chilli flakes or Aleppo pepper
- 1/2 tsp garlic granules
- 1/2 tsp fine sea salt
- 1/4 tsp freshly ground black pepper
- 1 tsp runny honey or maple syrup
- 1 tsp lemon juice
Method
- Pulse 60g of the sunflower seeds in a blender until coarse meal forms.
- Combine ground seeds, remaining whole seeds, oats, flour, cornflour, sesame seeds, smoked paprika, cumin, chilli flakes, garlic granules, salt, and pepper in a bowl.
- Whisk egg, yoghurt, olive oil, honey or maple syrup, and lemon juice in a separate cup.
- Pour wet mixture over dry ingredients and mix with a fork, pressing for 30–45 seconds.
- Rest mixture for 10 minutes at room temperature.
- Preheat air fryer to 180°C for 3 minutes.
- Shape mixture into 18 compact bites, about 1.5cm thick.
- Line air fryer basket with perforated parchment if needed, arrange bites with 1cm gaps, and brush tops with oil.
- Air fry at 180°C for 8 minutes, turn bites, brush second side with oil, and cook for another 5–7 minutes.
- Rest bites on a wire rack for 5 minutes before serving.
