Crispy Spiced Quinoa Fritters

Quinoa fritters are a nutritious and satisfying snack, made healthier by using an air fryer for a crispy texture.

Ingredients

  • 1 cup quinoa, rinsed and drained
  • 2 cups water
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika

Method

  1. In a medium saucepan, bring the quinoa and water to a boil. Reduce the heat to low, cover, and simmer for about 15 minutes or until the water is fully absorbed. Allow it to cool slightly.
  2. In a large mixing bowl, combine the cooked quinoa, breadcrumbs, Parmesan cheese, eggs, minced garlic, cumin, coriander, smoked paprika, chilli flakes, salt, and pepper. Mix until well combined.
  3. Using your hands, form the mixture into small patties or fritters (about 2 inches in diameter) and place them on a plate.
  4. Preheat your air fryer to 190°C (375°F) for about 5 minutes.
  5. Brush each fritter lightly with olive oil before transferring them to the air fryer basket. Cook each batch for about 10-12 minutes, flipping halfway through, until golden brown and crispy.
