Crispy Minted Green Pea Fritters
These green pea fritters are a delightful combination of crisp edges and a soft, sweet centre, enhanced by the freshness of mint. The air fryer is ideal for this dish, as it quickly removes surface moisture, allowing the fritters to brown beautifully without drying out the delicate pea mixture.
Ingredients
- 400g frozen peas, thawed
- 2 spring onions, finely sliced
- 15g fresh mint leaves, finely chopped
- 1 small garlic clove, finely grated
- Zest of 1 unwaxed lemon, plus 1 tbsp lemon juice
- 1 medium egg, beaten
- 60g plain flour, plus 1 tbsp extra if needed
- 1 tsp baking powder
- 50g panko breadcrumbs, divided
- 40g feta, crumbled, optional
- ½ tsp fine sea salt, plus extra to finish
- ¼ tsp freshly ground black pepper
- 1 tbsp olive oil, plus a little extra for brushing or spraying
- 2 tbsp Greek yoghurt, to serve
- Extra mint leaves and lemon wedges, to serve
Method
- Tip the thawed peas onto a clean tea towel or several sheets of kitchen paper and pat them very dry.
- Put about two-thirds of the peas in a bowl and mash them roughly, leaving the remaining third whole.
- Add the spring onions, mint, garlic, lemon zest, lemon juice, beaten egg, flour, baking powder, 25g of the panko, feta if using, salt and pepper. Mix until no dry patches of flour remain.
- Leave the mixture to stand for 10 minutes. If it slumps immediately when spooned onto a plate, add the extra tablespoon of flour.
- Divide the mixture into 8 portions, about 55g each. Shape into patties roughly 7cm wide and 1.5cm thick.
- Scatter the remaining 25g panko on a plate and press each fritter lightly into it on both sides. Brush or spray the tops with a thin coating of olive oil.
- Preheat the air fryer to 190°C for 3 minutes. If using parchment, add it after preheating.
- Arrange the fritters in a single layer with at least 1cm between them. Cook at 190°C for 6 minutes, then gently turn and cook for a further 4–6 minutes.
- Rest the fritters on a wire rack or a plate lined with kitchen paper for 2 minutes before serving with yoghurt, lemon wedges and extra mint.
