Crispy Lemon Pepper Brussel Sprouts
These lemon pepper Brussels sprouts achieve a perfect balance of crispy edges and tender centres, thanks to the air fryer's ability to quickly dry and caramelise the cut surfaces. The air fryer ensures the sprouts aren't greasy, allowing the seasoning to shine through without overwhelming the natural flavours.
Ingredients
- 500g Brussels sprouts, trimmed and halved through the stalk end
- 1½ tbsp olive oil or rapeseed oil
- 2 tsp lemon pepper seasoning, preferably salt-free
- ½ tsp garlic granules
- ¼ tsp fine sea salt
- ½ lemon, zested before juicing
- 1 tsp lemon juice
- 1 tsp clear honey or maple syrup, optional
- 15g finely grated Parmesan, optional
- Small handful of chopped flat-leaf parsley, optional
Method
- Trim the dry stem ends from the Brussels sprouts, remove any yellowed outer leaves, then halve each sprout from top to stem.
- Soak the halved sprouts in cold water for 5 minutes if gritty, then drain and dry thoroughly.
- Preheat the air fryer to 190°C for 3 minutes if recommended by your model.
- Put the sprouts in a bowl with the oil, lemon pepper seasoning, garlic granules, and salt. Toss to coat evenly.
- If using honey or maple syrup, stir it in after the oil and seasoning.
- Tip the sprouts into the air fryer basket, spreading them out with cut sides mostly facing down.
- Air fry at 190°C for 8 minutes, then shake the basket and turn any large halves.
- Continue cooking for 4–7 minutes, checking after 4 minutes, until crisp and golden.
- Transfer to a warm bowl, add lemon zest and juice, toss, and adjust seasoning if needed.
- Finish with Parmesan or nutritional yeast and parsley, if using. Serve immediately.
