Crispy Herb-Crusted Pollock Fillets
A delicious and easy-to-make crispy herb-crusted pollock fillets recipe, perfect for air frying.
Ingredients
- 4 Pollock fillets (around 150g each)
- 1 cup breadcrumbs (panko preferred)
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon dried thyme
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- Salt and pepper to taste
- 2 eggs, beaten
- 2 tablespoons olive oil
Method
- Preheat your air fryer to 200°C (390°F).
- In a shallow dish, mix together the breadcrumbs, parsley, dried thyme, garlic powder, and onion powder. Season with salt and pepper.
- Dip each pollock fillet into the beaten eggs, making sure each fillet is fully coated.
- Press the egg-dipped fillet into the breadcrumb mixture, turning to coat all sides generously.
- Lightly brush or spray the air fryer basket with olive oil to prevent sticking.
- Place the coated fillets into the air fryer basket in a single layer, making sure there is space between each one.
- Air fry the fillets for about 12-15 minutes, or until the crust is golden brown and the fish flakes easily with a fork. The internal temperature of the fish should reach at least 63°C (145°F).
- Remove the fillets from the air fryer and let them rest for a minute before serving.
