Crispy Herb-Crusted Pollock Fillets

Ingredients

  • 4 Pollock fillets (around 150g each)
  • 1 cup breadcrumbs (panko preferred)
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dried thyme
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste
  • 2 eggs, beaten
  • 2 tablespoons olive oil

Method

  1. Preheat your air fryer to 200°C (390°F).
  2. In a shallow dish, mix together the breadcrumbs, parsley, dried thyme, garlic powder, and onion powder. Season with salt and pepper.
  3. Dip each pollock fillet into the beaten eggs, making sure each fillet is fully coated.
  4. Press the egg-dipped fillet into the breadcrumb mixture, turning to coat all sides generously.
  5. Lightly brush or spray the air fryer basket with olive oil to prevent sticking.
  6. Place the coated fillets into the air fryer basket in a single layer, making sure there is space between each one.
