Crispy Herb-Crusted Cod
A simple, satisfying crispy herb-crusted cod that’s just right for the air fryer.
Ingredients
- 4 cod fillets (about 150g each), skinless
- 100g breadcrumbs
- 2 tablespoons olive oil
- 2 tablespoons fresh parsley, finely chopped
- 1 tablespoon fresh dill, finely chopped
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Lemon wedges, for serving
Method
- In a bowl, stir together the breadcrumbs, olive oil, parsley, dill, garlic powder, salt, and pepper.
- Pat the cod fillets dry with kitchen paper, then press them into the herb mixture so they are evenly coated.
- Preheat your air fryer to 200°C (about 390°F) and lightly grease the basket.
- Place the coated fillets in the air fryer basket, making sure they are not touching.
- Air fry for 10-12 minutes, or until the crust is golden brown and the fish is cooked through.
- Serve the crispy herb-crusted cod fillets hot, garnished with lemon wedges.
