Crispy Halloumi and Spinach Wraps
Halloumi shines in this recipe, achieving a perfect balance of golden exterior and springy centre, while the air fryer ensures a crisp tortilla without excess oil. This method enhances the halloumi's natural fat for browning, making it an ideal choice for a quick and satisfying meal.
Ingredients
- 250g halloumi, drained and patted very dry, cut into 8 thick batons
- 4 large soft flour tortillas, about 25cm across
- 120g baby spinach, roughly chopped
- 2 spring onions, finely sliced
- 1 small garlic clove, finely grated
- 1 tbsp olive oil, plus 1 tsp for brushing or spraying the wraps
- 1 tsp smoked paprika
- ½ tsp ground cumin
- ½ tsp dried oregano
- Finely grated zest of ½ lemon
- 1 tbsp lemon juice
- 60g thick Greek yoghurt
- 1 tsp runny honey, optional
- 1 tbsp chopped fresh mint or parsley
- Freshly ground black pepper
- 1 tbsp plain flour mixed with 1 tbsp water, to make a sealing paste
- Optional: 1 roasted red pepper from a jar, drained and patted dry, sliced
Method
- Preheat the air fryer to 190°C for 3 minutes.
- Pat the halloumi batons thoroughly with kitchen paper.
- Toss the halloumi with 1 tbsp olive oil, smoked paprika, cumin, oregano and black pepper.
- Air fry the halloumi batons in a single layer at 190°C for 4–5 minutes, turning once, until lightly golden.
- Remove halloumi to a plate.
- Put the spinach in a heatproof bowl and pour over boiling water. Leave for 30 seconds, drain, then squeeze dry.
- Mix the spinach with spring onions, garlic, lemon zest, lemon juice, Greek yoghurt, honey if using, and mint or parsley.
- Warm the tortillas for 10–15 seconds in the microwave or briefly in the air fryer.
- Lay one tortilla on a board. Spread a quarter of the spinach mixture below the centre, leaving a 3cm border at the sides.
- Add two halloumi batons and a few strips of roasted red pepper if using.
- Fold the left and right sides in, then roll up tightly from the bottom into a compact parcel.
- Brush a little flour paste along the final edge and press to seal.
- Repeat with the remaining wraps.
- Brush or spray the outside of the wraps lightly with 1 tsp oil.
- Place the wraps seam-side down in the basket, leaving space between them.
- Air fry at 190°C for 7–9 minutes, turning after 5 minutes, until deeply golden and crisp at the edges.
- Rest for 2 minutes before cutting in half.
