Crispy Green Pea Fritters
These crispy green pea fritters make a lovely snack, with the air fryer giving them a crunchy outside and a soft, tender middle.
Ingredients
- 300g frozen peas, defrosted
- 2 spring onions, finely sliced
- 1 small garlic clove, finely grated
- 1 large egg, beaten
- 70g plain flour
- 20g cornflour
- 1 tsp baking powder
- 40g mature Cheddar, finely grated, or feta, crumbled
- 2 tbsp chopped fresh mint
- 2 tbsp chopped fresh coriander or flat-leaf parsley
- Finely grated zest of ½ lemon
- ½ tsp fine sea salt
- ¼ tsp freshly ground black pepper
- ¼ tsp chilli flakes, optional
- 1½ tbsp olive oil or rapeseed oil, for brushing or spraying
- 2 tbsp Greek yoghurt, to serve, optional
- Lemon wedges, to serve
Method
- Pat the defrosted peas very dry with a tea towel or kitchen roll.
- Mash two-thirds of the peas in a bowl, keeping a few chunky bits, then stir through the remaining whole peas.
- Add the spring onions, garlic, egg, flour, cornflour, baking powder, cheese, herbs, lemon zest, salt, pepper, and chilli flakes. Mix until everything is combined.
- Leave the mixture to rest for 10 minutes at room temperature.
- Preheat the air fryer to 190°C for 3 minutes.
- Shape the mixture into 10 fritters, roughly 6cm wide and 1.5cm thick.
- Lightly brush or spray the air fryer basket with oil, then arrange the fritters in a single layer.
- Air fry at 190°C for 7 minutes, turn the fritters over, then cook for another 4 to 6 minutes until golden and crisp.
- Let the fritters rest on a wire rack for 3 minutes before serving with yoghurt and lemon wedges.
