Crispy Cilantro Lime Shrimp
These coriander lime prawns boast a craggy, golden coating that shatters slightly before revealing a sweet and juicy interior. The air fryer is ideal for this dish, as its fast-moving convection heat crisps the breadcrumb surface quickly, while a light misting of oil ensures browning without excess fat.
Ingredients
- 400g raw king prawns, peeled and deveined, tails on or off, defrosted if frozen
- 1 lime, finely zested, plus 1 tbsp juice
- 15g fresh coriander, finely chopped, stalks included if tender
- 1 large egg
- 45g cornflour
- 80g panko breadcrumbs
- 1 tsp garlic granules
- 1 tsp smoked paprika
- ½ tsp ground cumin
- ¼ tsp cayenne pepper, optional
- ¾ tsp fine sea salt, divided
- ½ tsp freshly ground black pepper
- 1½ tbsp neutral oil, or enough oil spray to lightly coat both sides
Method
- Pat the prawns very dry with kitchen paper.
- Put the prawns in a bowl with lime zest, 1 tsp lime juice, half the chopped coriander, ¼ tsp salt, and black pepper; toss and leave for 5 minutes.
- Set up three bowls: cornflour in the first; beaten egg in the second; panko, garlic granules, smoked paprika, cumin, cayenne if using, remaining salt, and remaining coriander in the third.
- Coat each prawn in cornflour, shake off the excess, dip into egg, then press into the seasoned panko.
- Preheat the air fryer to 200°C for 3 minutes if your model recommends preheating.
- Lightly oil the basket or liner, then arrange the prawns in one layer with small gaps between them.
- Mist or brush the tops of the prawns with oil.
- Air fry at 200°C for 4 minutes, then turn the prawns carefully with tongs and oil any visibly dry patches.
- Cook for another 2–3 minutes, until the coating is golden and the prawns are opaque throughout.
- Finish with the remaining lime juice, extra coriander, and lime wedges. Serve immediately.
