Crispy Cauliflower Teriyaki Bites
Cauliflower's natural texture shines in this dish, with its craggy edges catching both heat and sauce beautifully. The air fryer is ideal here, as it quickly sets a crisp crust on the battered florets before the sticky teriyaki glaze is added, ensuring a delightful crunch.
Ingredients
- 1 medium cauliflower, about 650–750g, cut into 3–4cm florets
- 70g plain flour
- 35g cornflour
- 1 tsp baking powder
- 1 tsp garlic granules
- ½ tsp ground ginger
- ½ tsp fine sea salt
- 120ml cold sparkling water, plus 1–2 tbsp extra if needed
- 90g panko breadcrumbs
- 1½ tbsp neutral oil, such as rapeseed or sunflower oil
- 2 spring onions, finely sliced
- 1 tsp sesame seeds
- Optional: ½ tsp chilli flakes or 1 tsp sriracha
- 70ml light soy sauce
- 50ml mirin or 40ml rice vinegar mixed with 2 tsp caster sugar
- 35ml maple syrup or runny honey
- 1 tbsp brown sugar
- 1 small garlic clove, finely grated
- 1 tsp finely grated fresh ginger
- 1 tsp cornflour mixed with 1 tbsp cold water
- 1 tsp toasted sesame oil
Method
- Cut the cauliflower into bite-sized florets and pat dry with kitchen paper.
- Preheat the air fryer to 190°C for 3 minutes.
- Make the glaze: simmer soy sauce, mirin, maple syrup or honey, brown sugar, garlic, and ginger for 2–3 minutes. Stir in cornflour slurry and bubble for 30–60 seconds until thickened. Stir in sesame oil and set aside.
- In a large bowl, whisk together plain flour, cornflour, baking powder, garlic granules, ground ginger, and salt. Add cold sparkling water and whisk to a batter the thickness of double cream.
- Put panko breadcrumbs in a shallow bowl. Coat cauliflower in batter, let excess drip off, then press into panko. Repeat for all florets.
- Arrange coated florets in the air fryer basket in a single layer. Spray or drizzle lightly with oil.
- Air fry at 190°C for 10 minutes, turn bites, spray dry areas, and cook for another 5–8 minutes until crisp and golden.
- Transfer hot bites to a bowl, spoon over two-thirds of the teriyaki glaze, and toss gently. Return to air fryer for 2 minutes at 200°C to set the glaze.
- Finish with spring onions, sesame seeds, and chilli flakes if using. Serve immediately.
