Crispy Baked Bean and Cheese Taquitos

These taquitos crackle at the edges while staying molten and savoury in the middle, thanks to the air fryer's ability to strip moisture and blister the tortilla without making the filling greasy. It's a brilliant method for achieving that perfect texture without the hassle of deep frying.

Ingredients

  • 8 small flour tortillas, about 15 cm across, or mini wraps
  • 1 x 400 g tin baked beans in tomato sauce
  • 120 g mature Cheddar, grated
  • 40 g Monterey Jack, grated
  • 1 tbsp tomato purée
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • ½ tsp garlic granules
  • ½ tsp onion granules
  • ¼ tsp chilli powder, or more to taste
  • 1 tsp Worcestershire sauce
  • 1 tbsp chopped pickled jalapeños
  • 2 spring onions, finely sliced
  • 1 tbsp chopped fresh coriander
  • 1½ tbsp neutral oil, such as rapeseed or sunflower oil
  • Fine salt and black pepper, to taste

Method

  1. Tip the baked beans into a small saucepan and simmer over a medium heat for 6–8 minutes, stirring often, until the sauce is thick and glossy.
  2. Mash roughly half of the beans with a fork, leaving some whole for texture.
  3. Stir in the tomato purée, smoked paprika, cumin, garlic granules, onion granules, chilli powder and Worcestershire sauce. Cook for 1 further minute, then take off the heat.
  4. Let the bean mixture cool for 5–10 minutes, then stir in the Cheddar, Monterey Jack, jalapeños, spring onions and coriander. Taste and season lightly.
  5. Warm the tortillas for 20–30 seconds in the microwave under a clean tea towel, or for a few seconds each side in a dry frying pan.
  6. Place one tortilla on a board. Spoon about 2 tbsp of the filling in a narrow line just below the centre, keeping 2 cm clear at each end. Roll tightly away from you, then place seam-side down. Repeat with the remaining tortillas.
  7. Preheat the air fryer to 190°C for 3 minutes if your model recommends preheating.
  8. Brush the taquitos lightly all over with oil, paying attention to the seam and ends.
  9. Arrange 4 taquitos seam-side down in the basket, leaving gaps between them. Air fry at 190°C for 7 minutes, then turn with tongs and cook for another 3–5 minutes until deeply golden and crisp.
  10. Rest for 2 minutes before serving.
