Crispy Avocado-Fries

Crispy avocado fries with lime and a little spice make a tasty, healthier snack or side, and they’re especially good cooked in an air fryer.

Ingredients

  • 2 firm yet ripe avocados
  • 1 cup of panko breadcrumbs
  • 1/4 cup of plain flour
  • 2 large eggs, beaten
  • 1 lime, zested and juiced
  • 1/2 teaspoon of paprika
  • 1/4 teaspoon of cumin
  • Salt and pepper to taste
  • Cooking spray

Method

  1. Halve the avocados, remove the stones, then cut each half into 3 or 4 wedges. Peel each wedge.
  2. Set out three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with lime zest, paprika, cumin, salt, and pepper.
  3. Dip each avocado wedge into the flour, then the egg, and finally the panko mixture, pressing gently so the coating sits evenly.
  4. Preheat the air fryer to 200°C (390°F). Spray the basket with cooking spray. Arrange the wedges in a single layer, spray with cooking spray, and air fry for 7-10 minutes, until golden brown and crisp.
