Air Fryer Recipe
Crispy Avocado-Fries
Crispy avocado fries with lime and spice offer a delicious and healthy snack or side, ideally prepared in an air fryer.
Ingredients
- 2 firm yet ripe avocados
- 1 cup of panko breadcrumbs
- 1/4 cup of plain flour
- 2 large eggs, beaten
- 1 lime, zested and juiced
- 1/2 teaspoon of paprika
- 1/4 teaspoon of cumin
- Salt and pepper to taste
- Cooking spray
Method
- Slice avocados in half, remove pits, and slice each half into 3 or 4 wedges. Peel each wedge.
- Set up three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with lime zest, paprika, cumin, salt, and pepper.
- Coat each avocado wedge in flour, then egg, and finally panko mix, pressing lightly for an even coating.
- Preheat air fryer to 200°C (390°F). Spray basket with cooking spray. Place wedges in a single layer, spray with cooking spray, and air fry for 7-10 minutes until golden brown and crispy.
Why this works in an air fryer
The air fryer uses rapid hot air circulation to create a crispy exterior on the panko-coated avocado, enhancing Maillard reactions for flavour while preserving the creamy interior.
Equipment notes
Assumes a standard 3.5-litre basket. In dual-zone models, use one zone for even cooking; adjust timing if using both zones simultaneously.
Common pitfalls
- Avocado fries not browning by minute 10? Increase temperature by 10°C to boost the Maillard reaction.
- Breadcrumbs falling off? Ensure avocados are dry before flour coating; moisture prevents adhesion.
- Uneven crispness? Space wedges apart to allow air circulation; overcrowding blocks airflow.
- Avocados turning mushy? Use firm avocados; overly ripe ones collapse under heat.
Variations & substitutions
- Substitute panko with crushed cornflakes for a gluten-free option, which adds a different crunch texture.
- Add chilli powder to the panko mix for a spicier kick, altering the flavour profile.
- Use lemon zest instead of lime for a slightly different citrus note.
- Replace cumin with smoked paprika for a deeper, smoky flavour.
Storage & reheating
Store in an airtight container for up to 2 days; reheat in air fryer at 180°C for 3-4 minutes to restore crispness.
