Chipotle Honey-Glazed Carrots
Chipotle Honey-Glazed Carrots are a sweet and spicy side dish, perfect for air frying and pairing with various mains.
Ingredients
- 500g of fresh carrots, peeled and sliced evenly
- 2 tablespoons of honey
- 1 tablespoon chipotle paste
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh coriander (optional, for garnish)
Method
- Peel the carrots and slice them into even pieces.
- Mix honey, chipotle paste, and olive oil in a bowl. Pour over carrots and coat evenly. Season with salt and pepper.
- Preheat air fryer to 180°C (356°F) for 3 minutes. Place carrots in the air fryer basket in a single layer. Cook for 15-20 minutes, shaking halfway through.
- Transfer cooked carrots to a serving dish and garnish with fresh coriander.
Why this works in an air fryer
Air-fryer convection drives moisture off the carrot surfaces quickly, concentrating their sugars so the edges brown. A little oil improves heat transfer and helps the chipotle paste cling, while honey forms a glossy glaze late in cooking; even slicing matters because dense carrot cores soften slower than their cut faces caramelise.

Assumes a medium 4–5 litre basket holding 500g carrots in one loose layer; in a small basket cook in two batches. A single-drawer fryer may need a thorough shake and tray rotation halfway, while dual-zone models often run slightly cooler per drawer, so add 2–4 minutes if both zones are in use.
Common pitfalls
- Blackened sticky patches before the carrots are tender? The honey is scorching on the basket floor; lower to 170°C, shake more thoroughly, and cut thicker pieces slightly smaller next time.
- Carrots look pale and wet at 15 minutes? They are overcrowded or still damp after peeling; spread into a looser layer and cook 3–5 minutes longer, shaking to expose new surfaces.
- Tender tips but hard centres? The slices are uneven or too chunky; return the larger pieces for 4–6 minutes and aim for similar thickness rather than similar length next time.
- Glaze tastes harsh or bitter? Too much chipotle paste has caught in dry clumps; loosen the coating with an extra teaspoon of oil or honey before cooking and stir until no paste streaks remain.
Variations & substitutions
- Use maple syrup instead of honey for a thinner glaze that browns a little faster, so start checking 2 minutes earlier.
- Swap chipotle paste for harissa for a brighter chilli flavour; it usually contains more oil, so the carrots may brown slightly more evenly.
- Add 1 teaspoon lime juice after cooking, not before, to sharpen the sweetness without steaming the carrot surfaces during air frying.
- Use baby carrots, halved lengthways if thick; they cook more evenly than whole baby carrots and usually need the lower end of the stated time.
Storage & reheating
Keep refrigerated in an airtight container for up to 3 days, then reheat in the air fryer at 170°C for 4–6 minutes until hot and the glaze turns glossy again.
