Chilli Lime Avocado Fries

Ingredients

  • 2 ripe avocados
  • 1 lime (zested and juiced)
  • 1 teaspoon chilli powder
  • ½ teaspoon garlic powder

  • Salt and freshly ground black pepper, to taste
  • ½ cup plain flour (or gluten-free alternative)
  • 2 large eggs
  • 1 cup panko breadcrumbs (or a gluten-free option)

Method

  1. Halve the avocados, remove the stone, peel them, then cut each half into 3 or 4 lengths.
  2. In a shallow dish, stir the flour together with salt and pepper.
  3. In a second dish, beat the eggs.
  4. Combine the panko breadcrumbs with lime zest, chilli powder, garlic powder, onion powder, ground cumin, salt, and pepper.
  5. Coat the avocado slices in flour, dip them in the beaten egg, then cover with the seasoned panko mixture.
  6. Preheat the air fryer to 200°C (400°F) and lightly spray the basket with cooking spray or oil.
  7. Lay the avocado fries in a single layer in the air fryer basket.
  8. Cook for 8-10 minutes, turning halfway through, until golden brown and crisp.
