Cheese quesadillas

Cheese quesadillas are a quick and satisfying meal, perfect for making in an air fryer for a crispy exterior and gooey interior.

Ingredients

  • 4 large flour tortillas
  • 2 cups of shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1 tablespoon of olive oil or cooking spray

Method

  1. Preheat the air fryer to 180°C (350°F).
  2. Lay out tortillas and distribute shredded cheese on one half of each tortilla. Add optional fillings if desired.
  3. Fold each tortilla in half and brush with olive oil or use cooking spray.
  4. Place quesadillas in the air fryer basket in a single layer and cook for 5-6 minutes, flipping halfway through.
  5. Remove from air fryer, let cool for a minute, slice, and serve with dips.

  • Cheese leaking into the basket and smoking? The tortilla is overfilled or the cheese is too close to the edge; leave a 2 cm border and use slightly less cheese per quesadilla.
  • Tortilla crisp outside but unmelted cheese in the centre? The filling layer is too thick or cheese is fridge-cold; spread it thinly, use grated cheese, and cook 1–2 minutes longer at 170°C.
  • Patchy pale spots after flipping? The tortillas were overlapping or not lightly coated with oil; cook in a single layer and mist the dry areas before returning to the fryer.

Variations & substitutions

  • Use mozzarella with cheddar for a stretchier filling; mozzarella releases more moisture, so cook towards the longer end and let it stand briefly before slicing.
  • Add drained jalapeños, sweetcorn or roasted peppers; pat them dry first or the steam will soften the tortilla instead of letting it crisp.
  • Use wholemeal tortillas for a nuttier flavour; they brown faster and can turn brittle, so check at 4 minutes.
  • Add cooked chicken or beans in a thin layer; because they slow heat transfer through the filling, keep pieces small and add about 1 minute if the centre is not hot.

Storage & reheating

Keep cooled quesadillas in the fridge for up to 3 days and reheat in the air fryer at 170°C for 3–5 minutes until the tortilla re-crisps and the cheese is hot.
