Cheddar Broccoli Bites

Cheddar broccoli bites are a nutritious and easy-to-make snack or side dish, perfect for air frying.

Ingredients

  • 250g broccoli florets
  • 150g grated cheddar cheese
  • 50g breadcrumbs
  • 2 large eggs
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Cooking spray or oil for air fryer

Method

  1. Steam the broccoli florets for about 5 minutes until tender, then finely chop and cool.
  2. In a large bowl, combine chopped broccoli, grated cheddar cheese, breadcrumbs, and eggs. Add garlic powder, salt, and pepper, and mix well.
  3. Shape the mixture into bite-sized balls or patties.
  4. Preheat the air fryer to 180°C for about 5 minutes.
  5. Lightly spray or brush the air fryer basket with oil. Place the broccoli bites in a single layer, ensuring they do not touch each other.
  6. Cook for about 10-15 minutes, flipping halfway through, until golden brown and crispy.
  7. Allow the bites to cool slightly and serve with your favourite dipping sauce.

Why this works in an air fryer

Steaming softens the broccoli so it binds, but cooling lets excess steam escape; a wet mix turns stodgy. In the air fryer, fast convection dries the breadcrumb and cheese-coated surfaces while the eggs set the centre. A light oil film improves browning by conducting heat into the rough surface.

Equipment notes

Assumes a 4–6 litre basket holding the bites in one layer with gaps; cook in batches if needed. In a single-drawer air fryer, place them around the hotter outer edge and turn halfway. In a dual-zone model, split evenly between drawers and check 2–3 minutes early, as smaller loads often brown faster.

Common pitfalls

  • Mixture slumping into flat puddles before minute 5? The broccoli was too wet or warm; squeeze it in kitchen paper and chill the shaped bites for 15 minutes before cooking.
  • Pale tops but dark bottoms by the halfway point? Too little oil on the exposed surface; spray the tops lightly after flipping so the breadcrumbs can brown rather than dry out.
  • Cracking or leaking cheese in the basket? The bites are too large or the heat is too aggressive; make smaller patties and reduce to 170°C for a gentler set.
  • Soft, steamed exterior after 10 minutes? The basket is overcrowded; leave clear gaps and add 3–5 minutes, or cook in two batches for proper airflow.

Variations & substitutions

  • Swap cheddar for Red Leicester for a sweeter, deeper colour; it melts similarly but may brown a little quicker, so check early.
  • Use panko instead of fine breadcrumbs for a rougher, crunchier crust; the bites may need an extra spray of oil to brown evenly.
  • Add 1 teaspoon Dijon mustard or smoked paprika to the mix; it changes flavour without altering timing, provided no extra liquid is added.
  • Replace half the broccoli with finely chopped cooked cauliflower; squeeze it well, as cauliflower holds more water and can make the centres softer.

Storage & reheating

Keep cooked bites chilled in an airtight container for up to 3 days, then reheat in the air fryer at 170°C for 4–6 minutes until hot and crisp again.
