Cauliflower Cheese Bites

Cauliflower cheese bites are a delicious and easy snack, perfect for air frying and loved by everyone.

Ingredients

  • 1 large head of cauliflower
  • 150g grated cheddar cheese
  • 50g grated parmesan cheese
  • 2 large eggs
  • 50g breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper, to taste

Method

  1. Cut cauliflower into small florets, rinse, and pat dry.
  2. Steam florets for 8-10 minutes until tender, then mash slightly.
  3. Add cheddar, parmesan, eggs, breadcrumbs, garlic powder, paprika, salt, and pepper to mashed cauliflower and mix well.
  4. Shape mixture into bite-sized balls and refrigerate for 30 minutes.
  5. Preheat air fryer to 200°C (390°F), lightly oil the basket, and air fry bites for 12-15 minutes, flipping halfway.

Why this works in an air fryer

Steaming softens the cauliflower so it binds, but patting dry prevents excess water turning the bites pasty. Breadcrumbs and egg set into a firm matrix, while cheddar fat and parmesan proteins brown under fast air-fryer convection, giving a crisp shell before the centre overcooks.

Equipment notes

Assumes a 4-6 litre basket holding the bites in one layer with gaps; in a single-drawer model cook in batches if needed, while dual-zone drawers usually run slightly cooler per side, so swap/rotate the drawers or add 2-3 minutes and position bites away from the outer corners.

Common pitfalls

  • Mixture slumping into patties before cooking? The cauliflower is too wet or over-mashed; squeeze it in a clean tea towel and add 1-2 tbsp extra breadcrumbs before chilling again.
  • Bites cracking open with cheese leaking by minute 6? They are too large or not chilled enough; make smaller balls and refrigerate until firm so the egg sets before the cheese fully melts.
  • Pale, soft outsides after 12 minutes? The basket is crowded or under-oiled; leave visible gaps, mist lightly with oil, and cook 2-4 minutes longer.
  • Dark patches but a cold, loose centre? The bites are oversized or the air fryer runs hot; reduce to 180°C and extend cooking until the centre feels set when pressed.

Variations & substitutions

  • Swap cheddar for Red Leicester for a deeper colour and slightly sweeter flavour; it melts readily, so chill the shaped bites well to limit leaking.
  • Use panko instead of fine breadcrumbs for a more open, crunchy crust; the bites may brown a little faster, so check from minute 10.
  • Add 1 tsp English mustard powder for a sharper cauliflower-cheese flavour; it does not alter timing but can make the mix seem drier, so avoid adding extra crumbs too early.
  • Use gluten-free breadcrumbs as a straight swap; they often absorb less moisture, so add them gradually and chill until the mixture holds its shape.

Storage & reheating

Keep cooked bites chilled in an airtight container for up to 3 days, then reheat in the air fryer at 180°C for 4-6 minutes until hot and re-crisped.
