Caramelised Onion and Cheese Tarts
These Caramelised Onion and Cheese Tarts are simple, savoury little tarts that cook beautifully in the air fryer.
Ingredients
- 320g ready-rolled puff pastry sheet, chilled
- 2 medium brown onions, about 300g total, thinly sliced
- 1 tbsp olive oil
- 15g butter
- 1 tsp soft brown sugar
- 1 tsp balsamic vinegar
- 1 tsp fresh thyme leaves, or ½ tsp dried thyme
- 80g mature Cheddar, grated
- 40g soft goat’s cheese, crumbled
- 1 tsp Dijon mustard
- 1 egg, beaten, for glazing
- Plain flour, for dusting
- Fine sea salt and freshly ground black pepper
- Optional: 1 tsp chopped chives or parsley
Method
- Put the sliced onions, olive oil, butter, brown sugar, thyme, salt and pepper into a heatproof dish.
- Air fry at 160°C for 18–22 minutes, stirring every 5 minutes, until the onions are soft and glossy.
- Stir in the balsamic vinegar, then air fry for 3–4 more minutes until sticky.
- Tip the onions onto a plate and leave to cool for at least 10 minutes.
- Unroll the puff pastry and cut it into squares or rectangles.
- Score a 1cm border around each piece, then prick the centre with a fork.
- Brush the centre with Dijon mustard and spoon over the cooled onions.
- Scatter over the grated Cheddar and crumble the goat’s cheese on top.
- Brush the pastry borders with beaten egg.
- Preheat the air fryer to 190°C for 3 minutes.
- Place the tarts on parchment in the basket, leaving space between them.
- Air fry at 190°C for 8-13 minutes until golden and firm.
- Leave the tarts to rest on a wire rack for 3–5 minutes before serving.
- Sprinkle with chives or parsley, if using.
