Caramelised Onion and Cheese Tarts

These Caramelised Onion and Cheese Tarts are simple, savoury little tarts that cook beautifully in the air fryer.

Ingredients

  • 320g ready-rolled puff pastry sheet, chilled
  • 2 medium brown onions, about 300g total, thinly sliced
  • 1 tbsp olive oil
  • 15g butter
  • 1 tsp soft brown sugar
  • 1 tsp balsamic vinegar
  • 1 tsp fresh thyme leaves, or ½ tsp dried thyme
  • 80g mature Cheddar, grated
  • 40g soft goat’s cheese, crumbled
  • 1 tsp Dijon mustard
  • 1 egg, beaten, for glazing
  • Plain flour, for dusting
  • Fine sea salt and freshly ground black pepper
  • Optional: 1 tsp chopped chives or parsley

Method

  1. Put the sliced onions, olive oil, butter, brown sugar, thyme, salt and pepper into a heatproof dish.
  2. Air fry at 160°C for 18–22 minutes, stirring every 5 minutes, until the onions are soft and glossy.
  3. Stir in the balsamic vinegar, then air fry for 3–4 more minutes until sticky.
  4. Tip the onions onto a plate and leave to cool for at least 10 minutes.
  5. Unroll the puff pastry and cut it into squares or rectangles.
  6. Score a 1cm border around each piece, then prick the centre with a fork.
  7. Brush the centre with Dijon mustard and spoon over the cooled onions.
  8. Scatter over the grated Cheddar and crumble the goat’s cheese on top.
  9. Brush the pastry borders with beaten egg.
  10. Preheat the air fryer to 190°C for 3 minutes.
  11. Place the tarts on parchment in the basket, leaving space between them.
  12. Air fry at 190°C for 8-13 minutes until golden and firm.
  13. Leave the tarts to rest on a wire rack for 3–5 minutes before serving.
  14. Sprinkle with chives or parsley, if using.
