Air Fryer Recipe
Banana fritters
Banana fritters are a delightful treat that combine the natural sweetness of ripe bananas with a crispy, golden exterior, made healthier using an air fryer.
Ingredients
- 2 ripe bananas
- 100g all-purpose flour
- 50g sugar
- 1 large egg
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- A pinch of cinnamon (optional)
- 1 teaspoon vanilla extract
- 2 tablespoons milk (dairy or plant-based)
Method
- Mash the bananas until smooth but slightly chunky in a medium bowl.
- Add the egg and vanilla extract to the bananas and mix well.
- In another bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
- Gradually add the dry ingredients to the banana mixture.
- Stir in the milk a little at a time to achieve a smooth batter.
- Preheat the air fryer to 180°C (356°F) for about 5 minutes.
- Drop spoonfuls of batter onto the air fryer basket lined with parchment paper.
- Cook the fritters for 8-10 minutes, flipping halfway through, until golden brown and crispy.
- Remove the fritters and let them cool slightly on a wire rack.
- Serve with powdered sugar or ice cream.
Why this works in an air fryer
Air frying uses convection to circulate hot air, creating a crispy exterior quickly without excess oil, ideal for fritters.
Equipment notes
Assumes a 3.5L basket; in dual-zone air fryers, cook in the top zone for even browning, adjusting time by ±2 minutes.
Common pitfalls
- Fritters not browning by minute 5? Increase temperature by 10°C — batter may be too wet.
- Fritters sticking to the basket? Ensure parchment paper is used and lightly oiled.
- Fritters collapsing when flipped? Batter might be too thin; reduce milk slightly.
Variations & substitutions
- Substitute whole wheat flour for a denser texture and nutty taste.
- Use coconut sugar instead of white sugar for a caramel-like flavour.
- Add a pinch of nutmeg for a spicier aroma.
Storage & reheating
Store in an airtight container for up to 2 days; reheat in the air fryer at 160°C for 3-4 minutes.
