Bacon-wrapped asparagus
A simple, tasty bacon-wrapped asparagus recipe that’s just right for the air fryer.
Ingredients
- 1 bundle of fresh asparagus (approximately 500g)
- 8-10 slices of streaky bacon
- Salt and freshly ground black pepper to taste
- 1 tablespoon of olive oil
- 1 clove of garlic, minced (optional)
Method
- Wash the asparagus well, then dry it thoroughly. Snap off the woody ends at the base.
- Put the asparagus in a bowl and toss with the olive oil, salt, pepper and minced garlic.
- Take one or two asparagus spears and wind a slice of bacon around the bundle, using a toothpick to secure it if needed.
- Preheat the air fryer to 200°C (390°F) for 3-5 minutes.
- Arrange the bacon-wrapped asparagus bundles in the air fryer basket, making sure they do not overlap.
- Cook for 10-12 minutes, until the bacon is crisp and the asparagus is tender.
- Check that they are done, then remove any toothpicks before serving.
Why this works in an air fryer
Hot air strips moisture from the bacon surface while rendered fat bastes the asparagus, so the outside crisps before the spears collapse. Dry asparagus matters: water trapped under the bacon steams the wrap and delays browning, especially where the slices overlap.
Equipment notes
Assumes a 5-6 litre basket holding 8-10 small bundles in one layer; in a smaller drawer cook in two batches. In a single-drawer air fryer, place thicker bundles near the hotter back/edges and turn once; in dual-zone models, split evenly and check 1-2 minutes early as smaller zones often brown faster.
Common pitfalls
- Bacon still pale at 10 minutes but asparagus tips are soft? The bacon is wrapped too thickly or overlapping heavily; use thinner streaky bacon, stretch it slightly before wrapping, and give it another 2-3 minutes at 190°C.
- Asparagus looks shrivelled and stringy before the bacon crisps? The spears are too thin for the cook time; bundle 3-4 thin spears together or use thicker asparagus next time.
- Garlic has turned bitter black specks? Minced garlic on the outside is scorching in the airflow; mix it into the oil lightly or use garlic granules, and brush off loose pieces before cooking.
- Undersides are soft and greasy? Rendered bacon fat is pooling under crowded bundles; leave gaps between bundles and turn them halfway so the fat can drain through the basket.
Variations & substitutions
- Use pancetta instead of streaky bacon for a saltier, thinner wrap; it cooks faster, so start checking from 8 minutes.
- Brush with a little maple syrup for a sweet-salty glaze; add it only for the final 2-3 minutes or it can burn.
- Swap olive oil for a neutral spray oil if the bacon is very fatty; this reduces greasiness while still helping the asparagus seasonings cling.
- Add a sprinkle of grated Parmesan after cooking rather than before; pre-cooked cheese can blow around and scorch in the air fryer.
Storage & reheating
Keep leftovers covered in the fridge for up to 2 days, then reheat in the air fryer at 180°C for 3-5 minutes until the bacon re-crisps and the asparagus is hot.
