Aubergine Meatball Skewers
Aubergine meatball skewers are a delightful vegetarian alternative to traditional meat skewers, perfect for air frying.
Ingredients
- 2 large aubergines
- 1 cup breadcrumbs

- 2 cloves garlic, minced

Method
- Wash and dry aubergines, dice into small pieces, sprinkle with salt, and let sit for 20 minutes.
