Air Fryer Recipe
Aloo Tikki
Aloo Tikki is a popular North Indian street food made from spiced potato patties, perfect for air frying.
Ingredients
- 4 medium potatoes, boiled and mashed
- 1 cup green peas
- 1 green chili, finely chopped
- 1 teaspoon ginger, grated
- 1 teaspoon garam masala
- 1 teaspoon cumin powder
- 1 teaspoon red chili powder
- Salt to taste
- 2 tablespoons coriander leaves, chopped
- 1 tablespoon oil (for air frying)
Method
- In a large mixing bowl, combine boiled and mashed potatoes, green peas, chopped green chili, grated ginger, garam masala, cumin powder, red chili powder, chopped coriander leaves, and salt. Mix well.
- Divide the mixture into equal portions and shape each portion into a round, flat patty.
- Preheat the air fryer to 200°C (about 390°F) for 5 minutes.
- Brush or spray a small amount of oil on both sides of the tikkis. Arrange them in the air fryer basket in a single layer.
- Cook for about 10-15 minutes, flipping the tikkis halfway through the cooking time until golden brown and crisp.
- Serve hot with green chutney or ketchup.
Why this works in an air fryer
The air fryer uses rapid air circulation to create a convection effect, which crisps the outer layer of the tikkis while keeping the inside moist and tender.
Equipment notes
This recipe assumes a standard 3.5-litre basket. In a dual-zone air fryer, use the top zone for even browning, but monitor closely as cooking may complete faster.
Common pitfalls
- Tikkis breaking apart? Ensure potatoes are fully mashed and mixture is well-combined.
- Uneven browning by minute 10? Rotate the basket or rearrange tikkis for uniform exposure to hot air.
- Tikkis sticking to the basket? Ensure oil is evenly applied to both sides before cooking.
Variations & substitutions
- Substitute sweet potatoes for a sweeter flavour and adjust seasoning to balance.
- Add finely chopped onions for extra texture and a slight sweetness.
- Use smoked paprika instead of red chili powder for a smoky undertone.
Storage & reheating
Store in an airtight container for up to 3 days. Reheat in the air fryer at 180°C for 3-5 minutes to regain crispness.
