Air Fryer Potato Croquettes

Potato croquettes are a classic comfort food, and using an air fryer ensures they achieve that perfect crispy coating without the need for deep frying. The rapid convection of the air fryer crisps the breadcrumbs beautifully while keeping the inside smooth and creamy.

Ingredients

  • 750g floury potatoes, such as Maris Piper or King Edward, peeled and cut into even chunks
  • 35g butter
  • 2 tbsp whole milk, warmed
  • 1 large egg yolk, for the mash
  • 50g mature Cheddar, finely grated, or Parmesan-style hard cheese
  • 1 tbsp finely chopped chives or parsley
  • ½ tsp fine sea salt, plus extra for the potato water
  • ¼ tsp ground white or black pepper
  • Pinch of nutmeg, optional
  • 45g plain flour
  • 2 large eggs, beaten, for coating
  • 100g panko breadcrumbs or dried white breadcrumbs
  • 1 tbsp olive oil or neutral oil, plus oil spray
  • Optional: ½ tsp smoked paprika or garlic granules stirred into the breadcrumbs

Method

  1. Put the potatoes in a pan of cold salted water, bring to a boil, then simmer for 15–18 minutes until a knife slides through without resistance.
  2. Drain thoroughly, then return the potatoes to the hot pan for 1–2 minutes, shaking gently, until steam stops billowing.
  3. Mash or rice the potatoes while hot, then beat in the butter, warm milk, egg yolk, cheese, herbs, salt, pepper and nutmeg.
  4. Spread the mash on a plate or tray and chill for at least 45 minutes, or until firm enough to scoop cleanly.
  5. Weigh portions of about 45–50g each and roll into short cylinders, roughly 6–7cm long.
  6. Set up three shallow bowls: flour in the first, beaten eggs in the second, and breadcrumbs mixed with 1 tbsp oil in the third.
  7. Coat each croquette first in flour, shaking off excess, then in beaten egg, then in breadcrumbs. Press the crumbs on gently, especially at the ends.
  8. Preheat the air fryer to 190°C for 3 minutes.
  9. Arrange the croquettes in a single layer with at least 1cm between them. Spray lightly with oil.
  10. Air fry at 190°C for 8 minutes, then turn carefully with tongs or a small spatula. Cook for a further 4–6 minutes until evenly golden and crisp.
  11. Rest for 3 minutes before serving.
