Air Fryer Coconut Shrimp
This air fryer coconut shrimp recipe gives you a crisp, golden coating and juicy prawns inside, just right for a quick appetiser or snack.
Ingredients
- 450g large raw king prawns, peeled and deveined
- ½ tsp fine sea salt
- ¼ tsp ground white or black pepper
- ½ tsp smoked paprika
- ¼ tsp garlic granules
- 50g plain flour
- 1 tbsp cornflour
- 2 large eggs
- 1 tbsp water
- 70g panko breadcrumbs
- 60g desiccated coconut, unsweetened
- 1 tsp caster sugar
- 1½–2 tbsp neutral oil in a spray bottle
Method
- Pat the prawns dry, then season with salt, pepper, paprika, and garlic granules.
- Set out three bowls: flour and cornflour in the first, beaten eggs and water in the second, and panko, coconut, sugar, and salt in the third.
- Dip each prawn into the flour, then the egg, then the panko-coconut mixture, pressing firmly so it sticks.
- Chill the coated prawns for 10 minutes if you can.
- Preheat the air fryer to 190°C for 3 minutes.
- Spray the basket with oil, lay the prawns in a single layer, and lightly spray the tops.
- Air fry at 190°C for 4 minutes, turn the prawns, spray any dry patches, and cook for another 3-4 minutes.
- Check they are cooked through, then transfer to a rack. Serve with lime wedges and sweet chilli sauce.
