Air Fryer Coconut Shrimp
This air fryer coconut shrimp recipe offers a crispy, golden coating with a juicy shrimp center, perfect for a quick appetizer or snack.
Ingredients
- 450g large raw king prawns, peeled and deveined
- ½ tsp fine sea salt
- ¼ tsp ground white or black pepper
- ½ tsp smoked paprika
- ¼ tsp garlic granules
- 50g plain flour
- 1 tbsp cornflour
- 2 large eggs
- 1 tbsp water
- 70g panko breadcrumbs
- 60g desiccated coconut, unsweetened
- 1 tsp caster sugar
- 1½–2 tbsp neutral oil in a spray bottle
Method
- Pat prawns dry and season with salt, pepper, paprika, and garlic granules.
- Set up three bowls: flour and cornflour in the first, beaten eggs and water in the second, panko, coconut, sugar, and salt in the third.
- Dip each prawn in flour, then egg, then panko-coconut mixture. Press firmly.
- Chill coated prawns for 10 minutes if possible.
- Preheat air fryer to 190°C for 3 minutes.
- Spray basket with oil, arrange prawns in a single layer, and spray tops lightly.
- Air fry at 190°C for 4 minutes, turn prawns, spray dry areas, and cook for another 3-4 minutes.
- Check doneness and transfer to a rack. Serve with lime wedges and sweet chilli sauce.
