Air Fryer Coconut Shrimp

This air fryer coconut shrimp recipe gives you a crisp, golden coating and juicy prawns inside, just right for a quick appetiser or snack.

Ingredients

  • 450g large raw king prawns, peeled and deveined
  • ½ tsp fine sea salt
  • ¼ tsp ground white or black pepper
  • ½ tsp smoked paprika
  • ¼ tsp garlic granules
  • 50g plain flour
  • 1 tbsp cornflour
  • 2 large eggs
  • 1 tbsp water
  • 70g panko breadcrumbs
  • 60g desiccated coconut, unsweetened
  • 1 tsp caster sugar
  • 1½–2 tbsp neutral oil in a spray bottle

Method

  1. Pat the prawns dry, then season with salt, pepper, paprika, and garlic granules.
  2. Set out three bowls: flour and cornflour in the first, beaten eggs and water in the second, and panko, coconut, sugar, and salt in the third.
  3. Dip each prawn into the flour, then the egg, then the panko-coconut mixture, pressing firmly so it sticks.
  4. Chill the coated prawns for 10 minutes if you can.
  5. Preheat the air fryer to 190°C for 3 minutes.
  6. Spray the basket with oil, lay the prawns in a single layer, and lightly spray the tops.
  7. Air fry at 190°C for 4 minutes, turn the prawns, spray any dry patches, and cook for another 3-4 minutes.
  8. Check they are cooked through, then transfer to a rack. Serve with lime wedges and sweet chilli sauce.
