Air-Fried Lamb Samosas
Lamb samosas are a delightful snack with a crispy exterior and spiced interior, perfect for air frying.
Ingredients
- 250g minced lamb
- 1 tablespoon oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 green chilli, finely chopped
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- Salt and pepper to taste
- 1 pack of samosa wrappers or filo pastry
- Cooking spray or a little oil for brushing
Method
- Heat the oil in a pan over medium heat.
- Add the onions and cook until golden brown.
- Add garlic, ginger, and green chilli; stir for a minute until fragrant.
- Add minced lamb, cumin powder, coriander powder, garam masala, salt, and pepper.
- Cook until the lamb is browned and cooked through.
- Remove from heat and let the filling cool slightly.
- Take a samosa wrapper or filo pastry strip, place a tablespoon of filling at one end, and fold into a triangular shape, sealing edges with water.
- Repeat until all filling is used.
- Lightly spray or brush samosas with oil.
- Preheat air fryer to 180°C.
- Place samosas in air fryer basket without overcrowding.
- Cook for 10-12 minutes or until golden and crisp, turning halfway through.

- Use whole wheat samosa wrappers for a nuttier taste and slightly longer cooking time due to denser texture.
- Add peas to the filling for a sweeter note and adjust seasoning to balance.
- Replace green chilli with red chilli for a milder heat and a slight sweetness.
Storage & reheating
Store in an airtight container in the fridge for up to 3 days. Reheat in the air fryer at 160°C for 5-6 minutes until crisp.
