- Garnish with parsley and serve hot.
Why this works in an air fryer
The air fryer uses rapid air circulation to create a convection effect, ensuring even cooking and crisping of the potatoes and black pudding by removing surface moisture and rendering fats effectively.
Equipment notes
Assumes a 5-litre basket; in a dual-zone fryer, cook potatoes in one zone and add vegetables and black pudding in the other to manage timing and crisping.
Common pitfalls
- Potatoes not browning by minute 10? Increase temperature by 10°C for 3 minutes; moisture content might be too high.
- Black pudding falling apart? Reduce cooking time to 3 minutes and ensure slices are thicker.
- Vegetables burning? Add them later or reduce temperature by 20°C; they cook faster than potatoes.
Variations & substitutions
- Substitute sweet potatoes for a sweeter, less starchy base; reduce initial cooking time by 2 minutes.
- Use chorizo instead of black pudding for a spicier profile; adjust cooking time to 4 minutes to prevent drying.
- Add a fried egg on top for a richer dish; cook separately and place on top before serving.
Storage & reheating
Reheat in the air fryer at 180°C for 5 minutes; keeps well in the fridge for up to 2 days.
