Air-Fried Beetroot and Goat Cheese Croquettes
Beetroot croquettes are a delightful treat, especially when the exterior is crisp and the interior remains soft and sweet. The air fryer is ideal for this dish as it quickly dries the breadcrumb coating, ensuring a perfect crunch without the need for deep frying.
Ingredients
- 300g cooked beetroot, plain and not pickled, well drained
- 250g floury potatoes, peeled and cut into chunks
- 100g soft goat cheese, chilled
- 70g panko breadcrumbs, plus 30g for firming the mixture if needed
- 40g plain flour
- 1 large egg, beaten
- 1 small garlic clove, finely grated
- 1 tbsp finely chopped dill or chives
- 1 tsp lemon zest
- 1 tsp Dijon mustard
- ½ tsp fine sea salt, plus extra for the potato water
- ¼ tsp freshly ground black pepper
- 1 tbsp olive oil, or an olive oil spray for the coating
- Optional: 25g finely chopped walnuts for the filling
- To serve: Greek yoghurt, soured cream or crème fraîche, with a squeeze of lemon
Method
- Boil the potatoes in well-salted water for 12–15 minutes, until tender, then drain and steam-dry in the pan for 3 minutes before mashing.
- Grate the cooked beetroot, wrap it in a clean tea towel, and squeeze until it stops dripping.
- In a bowl, mix the mashed potato, squeezed beetroot, garlic, herbs, lemon zest, mustard, salt, pepper, and 30g panko. Adjust with more panko if needed.
- Cut or pinch the chilled goat cheese into 10 small pieces. If using walnuts, press a few pieces into each bit of cheese.
- Divide the beetroot mixture into 10 portions. Flatten one portion, place goat cheese in the centre, then roll into a ball.
- Chill the shaped croquettes for 25–30 minutes, or freeze for 10 minutes if the kitchen is warm.
- Set up three shallow dishes: plain flour, beaten egg, and remaining panko. Coat each croquette in flour, dip in egg, then roll in panko.
- Preheat the air fryer to 190°C for 3 minutes. Lightly spray or brush the croquettes with olive oil.
- Arrange the croquettes in the basket with at least 1.5cm between them. Air fry at 190°C for 10–12 minutes, turning at 6 minutes, until crisp and browned.
- Rest for 3 minutes before serving.
